Vegan Date Cake

This date cake recipe and my family go way back. I don’t even know where it came from; it just appeared one day scrawled on a pink Post-it. We’ve been making it for years and kids always think it’s chocolate cake. Not only is it good enough to be considered chocolate, this moist cake is vegan and just so easy to throw together, featuring one of the shortest ingredient lists for a cake.

Ingredients

  • 3/4 cup vanilla soymilk

  • 18 dates

  • 1 cup whole wheat flour

  • 3/4 cup granulated sugar

  • 1 tsp baking soda

  • 1/2 cup vegetable oil

  • 1 tbsp cashew pieces (optional)

Directions

  • Preheat oven to 350 degrees F. Grease an 8 x 8 pan or 9-inch round cake pan.
  • Warm up soymilk for 1 minute in microwave. Cut dates into halves or fourths and soak in soymilk for at least 10 minutes.
  • Combine flour, sugar, and baking soda in large bowl.
  • Blend soaked dates and soymilk in a blender, and add to dry ingredients. Add oil and stir.
  • Pour batter into pan and press cashew pieces into top to make a design. Bake for 35-40 minutes or until a toothpick comes out clean.
