At this point, chia seeds are nothing new on this blog — you can check out my recipe for Lemon Chia Muffins or Baked Steel Cut Oats to see other ways to use this amazing little superfood. But this recipe is slightly different. With just three ingredients you can make a healthy, delicious chia pudding that is sure to keep you satisfied for hours.
Approximately five minutes of effort are required total for this chia pudding — the longest part is just waiting for the chia seeds to absorb water. Then you just need to mix them with yogurt and top with any fruit your heart desires. I’ve made this pudding with strawberries, blueberries, peaches — the possibilities are endless, and no added sugar is needed. Enjoy it for breakfast, dessert, a snack — whatever you’d like!

1 tbsp chia seeds
1/2 cup yogurt (Greek, regular, plant-based… anything works!)
Fruit of choice for topping, cut into small pieces
Directions
- Soak 1 tbsp chia seeds in 1/3 cup water for at least two hours.
- A few minutes before you’re ready to eat, give the chia seeds a stir so that all of them have been immersed in the water. When you’re ready, add the soaked chia and water to the yogurt, and stir to combine. Top with fruit. Enjoy!
