Craving something intensely chocolatey and fudgey? I introduce you to brownie cookies: brownie flavor in cookie form. This is a quick no-mixer recipe that’s sure to delight. These cookies are also vegan, made without butter and hiding an apple inside. If it’s brownies you have your heart set on, be sure to check out my recipe for Espresso Brownies, but this uncaffeinated version is also a winner. With under ten ingredients and within half an hour, you too can achieve inner peace.

Ingredients

  • 1/2 peeled apple

  • 1 tbsp soymilk

  • 5/8 cup granulated sugar

  • 1/4 cup vegetable oil

  • 1 cup whole wheat flour

  • 1/4 cup cocoa powder

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/4 cup chocolate chips* (see notes)

Directions

  • Preheat oven to 350 degrees F. Prepare a cookie tray with parchment paper.
  • Grate the apple into a medium mixing bowl. Then add soymilk, sugar, and oil and mix ingredients until combined.
  • Combine flour, cocoa powder, baking powder, and salt in a separate bowl and add them to the wet ingredients. Mix until just combined. Then add chocolate chips and mix.
  • Form 1-tbsp balls of the dough and flatten them into your desired cookie size and shape.
  • Place cookies on tray and bake for 10-12 minutes. They should be soft to the touch and just set, because they’ll harden up as they cool and lose their fudginess if you overbake.

Notes

  • Use chopped chocolate for an even fudgier texture! The smaller pieces of chocolate will melt more evenly into the texture of the cookie, while chocolate chips will be want to keep their shape and spread less.
