Oats were definitely burned in the process of perfecting of this recipe, but after numerous bakes and adjustments, a star was born. This crunchy, aromatic granola will quickly replace the store-bought version as your go-to snack or parfait base. Not only is it tasty enough to become a staple in my house, it’s also healthy with no added sugar. And the short ingredient list comes together in five minutes. But don’t take my word for it, go make some!
Honey Cinnamon Granola

2 1/3 cups rolled oats
1/2 tsp salt
1 tsp cinnamon
1/2 tsp cardamom powder* (see notes)
1/4 cup olive oil
6 tbsp honey
2 tsp vanilla extract
Directions
- Preheat oven to 325 degrees F. Prepare a baking sheet with parchment paper.
- In a medium mixing bowl, combine oats, salt, cinnamon, and cardamom powder.
- Add oil, honey, and vanilla. Mix until all oats are lightly coated and pour granola onto prepared pan in an even layer.
- Bake for about 8 minutes and stir granola to keep it from burning. Bake for 10 more minutes, then use a spatula to press down on the granola if you prefer clumpier granola (like we do!). The finished product should be golden brown and tasty without any add-ins!
- Let granola cool completely. Use your hands to break the granola into chunks and store in an airtight container.
Notes
- You can also replace 2 tbsp of the honey with dates (chopped into small pieces) and/or dried cranberries to mix in once the granola cools.
- If you don’t have cardamom powder, feel free to omit it, but don’t skimp on the cinnamon!
