Crispy, cheesy, undeniable. Once I perfected the recipe for this easy way to eat zucchini, I immediately ate half a baking sheet on my own. They are seriously THAT addictive. I suspect I could eat the entire batch for lunch if my sister and impulse control didn’t try to stop me. This zucchini recipe is healthy and crazy delicious. It’s also incredibly quick and easy — all the cooking happens in the oven. Use any blend of spices you prefer to flavor these zucchini parmesan sticks!

Ingredients

  • 2 medium zucchini, cut into eighths lengthwise and halved

  • 1/4 cup grated vegetarian parmesan cheese

  • 2 tbsp whole wheat flour

  • 1/2 tsp garlic powder

  • 3/4 tsp chaat masala* (see notes)

  • 1/8 tsp ground cayenne pepper

  • 1-2 tbsp olive oil

Directions

  • Preheat oven to 350 degrees F. Prepare a baking sheet with parchment paper.
  • In a small bowl, combine parmesan, flour, garlic powder, chaat masala, salt, and cayenne pepper.
  • Place zucchini in medium bowl and add olive oil. Toss until coated, then add parmesan mixture and toss again. Once coated, place on baking sheet.
  • Bake in preheated oven for 15 minutes, or until tender. Then broil for 3 minutes, or until crisp and golden brown. Serve immediately.

Notes

  • Chaat masala is a mix of certain spices commonly used in Indian cooking. If you don’t have it, try using a combination of black salt and your preferred spices. If you want to make the real thing, however, you can try this recipe by The Spruce Eats.
